    Right after noon I had to go shopping as turkey day is our Christmas. I needed some last minute things. No, I didn't accomplish all I wanted to get but did do a pretty good job on my list. I gave up shopping in Joann with the long lines and forgot that purchase. I didn't need it. [a ten dollar long 'spooky' hanging ornament in black with chains for 90% off] I went to Marshals and found a perfect wastepaper basket for my bathroom. Its brushed pewter with a ring of mother of pearl like tiles which sorta match the tiles in my bath. It'll go nicely. I really was not looking for a bathroom trash can but did want to replace those in many other rooms, so I'll merely switch the old bathroom one to another room. I am having a hard time finding what I want for the price I want to pay. [not much - hehehe] I went to the Dollar $tore and filled my cart. I found 'summertime' Scotties tissues for our June vacation. Now, who'd think to look for those in November? No one and that is why they're still there. I look in April and May and you'd think I'd find beach-y paper products at that time of the year. Heck no. I went on to Walmart and finished my errands, coming home at dinnertime. I never find any paperbacks when I'm looking [at Target. Walmart, Kmart etc.] but did find a reprint of a Betty Neels I do not believe I have. Its a Christmas one and more than likely I'll be needing a Betty Neels fix [relaxing read] after some of the books I have in my TBRs pile. Think Sherrilyn Kenyon, always a nerve wracking but wonderful read. Looking ahead, I was smart and leave the meat out to defrost so I'd be able to put dinner together quickly. Bob is going over to pick up Katie for our regular Sunday night sleep over. I miss the kids when I don't see them for a few days and its been a few. More than likely she'll want popcorn and hot chocolate with a movie tonight and with the tiredness I feel from the marathon shopping I did this afternoon, it'll be welcome. I am already looking forward to laying in the double guestroom bed with her little Dora the Explorer youth bed tucked up next to me so she can hold my hand to go to sleep. It's very sweet. I probably will be needing an early night of it anyway. Tomorrow, if I can encourage her, we'll do some more shopping, finishing up what I didn't accomplish.

    DINNER FRIDAY

    Country fried steak with onion gravy

    mashed potatoes

    salad

    biscuits

    sweet tea





    Alan Jackson's Country Fried Steak
    with Onion Gravy


    1 lb. cubed steak
    1/2 tsp. meat tenderizer
    1/2 tsp. salt
    2 tb. and 1/4 c. flour 1/2 c. oil
    1/4 c. chopped onion
    1 1/2 c. water

    Sprinkle steak with meat tenderizer and salt. Dredge steaks in 1/4 c. flour. Heat
    oil in frying pan. When oil is hot, brown steak on both sides. Remove steak from
    pan. Reduce heat. Stir in 2 tb. flour and dash of salt. Brown flour. Add about 1
    1/2 c. water. Return steak to pan. Add onions. Cover. Simmer on low heat 20-30
    min. until meat is tender. If gravy is too thick, add more water to make gravy the
    right consistency. Also, check for taste on salt. Serve hot with biscuits, mashed
    potatoes and salad. Makes 3-4 servings.

    Good for Mazie. I want to inspire her and all who read this list with my menus and ideas. I sure hope Alan is enjoying this Yankee gals offerings. Hehehe. What sort of Greek food was it. I love all types of things. I just tried something new to me today with the soup -- savory, creamy and pureed. Yum.

    Dinner tonight
    Squash soup
    parsley potatoes

    Smoked fried pork chops
    or
    flour dipped flounder
    Keebler® Sandies® Cashew Shortbread
    Sweet tea or Pepsi

    Butternut Squash Soup
    Ingredients
    2 tablespoons extra-virgin olive oil
    1/2 cup (1/4-inch) diced onion
    1/4 cup (1/4-inch) diced celery
    1/4 cup (1/4-inch) diced carrot
    1 cinnamon stick
    salt
    pepper
    About 4 cups chicken stock or broth
    1/2 teaspoon ground coriander
    1 1/2 cups butternut squash
    1/2 cup half-and-half
    Directions
    Heat the olive oil in a large saucepan over medium heat until hot. Add the onion, celery, carrot, and cinnamon stick and saute until soft but not brown, about 10 minutes. Season with salt and pepper.

    Add the chicken stock and the coriander, bring to a boil. Simmer for several minutes. Stir in the squash until smooth, then simmer gently to let the flavors meld, about 10 minutes. Discard the cinnamon stick.

    Puree the soup in a blender until smooth. (The soup can be made ahead to this point, cooled, covered, and refrigerated for several days or frozen for about 1 month. It will thicken as it cools and may need thinning with stock or water when reheating.)

    Return the soup to the pan and reheat gently. Add the half-and-half . Adjust the seasoning with salt and pepper. Keep warm until service.

    MICROWAVE PARSLEY POTATOES

    4 lg. potatoes
    Water and salt
    1 med. onion, chopped
    1 clove garlic, minced
    1/2 c. chopped parsley
    1 tbs. vegetable oil
    1/4 c. chicken broth or water
    Salt and pepper to taste

    Slice potatoes 1/4 inch thick. Place in salted water. In microwave safe dish, combine onion, garlic, parsley and oil. Microwave at high 2 to 3 minutes. Stir. Drain potatoes and add to onion mixture. Stir to coat potatoes. Spread evenly in dish. Pour broth over. Cover with plastic wrap. Microwave at 10 to 12 minutes until tender.

    DINNER FOR TUESDAY

    Going through a pile of recipes the other day I was reminded of a
    casserole recipe a friend gave me about twenty/thirty years ago. It
    was called Cedrick's Casserole and was a lazy man Golumpki recipe
    using tomato soup and baking the casserole. It was ok but didn't
    taste like the Golumpki mom used to make. We loved it. So I was
    thinking how to improve on that dish. Today's cooking is a lot of
    stir fry. Its so easy and does so well for one pot meals. I use those
    various sized stir fry pans often. I came up with the ingredients to
    the recipe online and adjusted it to my liking . Here is my versions.
    And btw it does taste just like mom used to make. Must be that
    ketchup.
    Enjoy...

    Golumpki or Annie's stuffed cabbage stir fry

    1 lb. ground beef
    3 cups cooked rice
    1 lg. onion chopped
    2 cloves garlic
    1/4 tsp. pepper
    1/2 tsp. salt
    1 16 oz jar tomato sauce
    4 c. coarsely chopped cabbage

    Brown meat, onion, cabbage and garlic with beef, S&P, until thoroughly cooked. Add rice, and sauce. Serve with ketchup and additional salt.

    DINNER MONDAY
    Rushed home after watching Katie all night and day and getting Kelsey from the bus and readying them for their gymnastics and horse back riding classes before their dinner.

    Bob likes to eat early as he's to bed early as he's out the door by six each morning and wakes at five. Long day for him.

    I made:

    two grilled hot dogs each with toasted buns with mustard and sweet pickle relish
    baked beans
    pasta salad.
    Pepsi for me and sweet tea for he
    no dessert right now as I'm way too stuffed.

    Enjoy dinner

    NO worries on the dark meat here dizzy as I used those flash frozen breast filets. Where did we ever get so lucky as the ease of defrosting and cooking like this. Ain't it great?

    DINNER SUNDAY

    One of my favorite meals and I haven't made it in a long time. Given to me by a friend and neighbor when my kids were wee one day while at her pool she asked what I was making for dinner. I said I have some chicken parts defrosting. She said if you'll try it I'll give you a recipe. I said sure I would. The results are this recipe which she just rambled the directions to me. I've used and loved this recipe for years. It's a keeper. Do try it and let me know what you think. The name is not a derogatory one but derived I believe because of the use of paprika in the flour mixture for the chicken as is chicken paprikash.


    Hunkie Chicken

    Flour chicken parts with salt, pepper and paprika. Brown chicken in oil, then add 1/4 cup water and cover and cook about 30 minutes until done. Remove chicken, remove grease, add water and flour to make gravy, with browned fat. Include bouillon cube if necessary. Add a 8 oz. carton of sour cream to gravy. Serve gravy over chicken and "bow" noodles. Serve with a green veggie such as zucchini or broccoli.

    DINNER SATURDAY

    Stopped off at McDonalds while driving up to the lake, about 45 miles away. The Big Mac meal for Bob, the fish sandwich meal for me, the chicken Mc Nuggets for both the girls with a Strawberry Shortcake toy for them both.
